Slice lotus root into 5mm thick pieces (20 slices total) and pat dry with a paper towel. Make a small cut in each shishito pepper. Mince the green onion and divide into two portions.

Heat salad oil in a pot to 170°C. Fry the stuffed lotus root pieces until golden brown on both sides.
