- 🐟 4 sardines, cleaned (360g)
Spices
- 1 piece ginger, julienned
Condiments
- 2 tbsp miso
Seasonings
- 💧 50cc water
- 3 tbsp sake
- 2 tbsp mirin
- 🍬 1 tbsp sugar
- 1/2 tbsp soy sauce

Pat the sardines dry with kitchen paper.
Julienne the ginger.
Bring water to a boil in a pan, add remaining seasonings and ginger, and bring to a boil again. Add sardines and spoon the broth over them while simmering for 1–2 minutes on medium heat.
Cover with a drop lid and simmer on low heat for 5 minutes.
Dissolve miso into the broth, cover with the drop lid again, and simmer for 10 minutes.
