Main Ingredients
- 60g fresh okara
- 🐟 2 pieces fresh salmon
- 🍆 3 eggplants
- 💧 300cc water
- 1/2 tsp Japanese dashi powder
- 5 shiso leaves
Seasonings
- 1 tbsp sake
- 2 tbsp mirin
- 1/2 tbsp grated ginger
- 🧂 1 tbsp soy sauce

Cut the eggplants in half lengthwise, score the skin diagonally, and then cut them into halves. Thinly slice the shiso leaves.
Cut the fresh salmon into three equal pieces.
In a frying pan, bring water and dashi powder to a boil. Add the seasonings (sake, mirin, grated ginger, soy sauce), salmon, and eggplants.
Cover with a lid and simmer on low heat for 8 minutes.
Add the okara and mix gently to combine. Simmer briefly, then serve on plates and garnish with shiso leaves.
