In the rice cooker, add the soaked rice, seasonings (☆), and water up to the 1-cup mark. Mix well and flatten the rice. Place the shimeji mushrooms and ginger on top, then lay the salmon fillet over them. Cook using the regular rice setting.

Once cooked, remove the skin and bones from the salmon, flake the flesh, and mix it into the rice. Serve in bowls and garnish with chopped green onion.
