- 🍬 1 tbsp sugar
- 2 tbsp salt koji
- 💧 150ml water

Remove seeds and pulp from the pumpkin. Peel tough skin and cut into bite-sized cubes (2–3 cm).

In a pot, combine pumpkin, water, mirin, sugar, and salt koji. Heat over medium heat until boiling.

Cover the pot and simmer on low heat for 6–8 minutes until the pumpkin is tender and a skewer passes through easily.
