- 🥬 300g turnip with leaves
- 3 slices ginger

- 1 tbsp mirin
- 3 tbsp salt koji
- 💧 150ml water

Peel the turnips and cut them into quarters. Retain the leaves and chop them into smaller pieces.
In a pot, combine sake, mirin, salt koji, and water. Bring the mixture to a simmer.
Add the yellowtail, turnips, and ginger slices to the pot. Simmer gently for about 15 minutes until the turnips are tender and the fish is cooked through.
Add the chopped turnip leaves in the last 2 minutes of cooking. Stir gently to incorporate.
