Cut the spinach into 4cm pieces and place in a microwave-safe container. Add 1 tbsp water, cover loosely with plastic wrap, and microwave at 600W for 90 seconds. Cool under running water, squeeze out excess moisture, and set aside. Thinly slice the garlic and remove the core.
Heat butter, garlic, and baby scallops in a frying pan over medium heat for 1–2 minutes. Add spinach and stir until coated with the fat. Season with salt, pepper, and soy sauce, then stir briefly to combine.
