Main Ingredients
- 1 handful soaked seaweed
- 3 tbsp miso paste
- 6 cups anchovy stock
- 🧈 300g diced tofu
- 🧄 1 tbsp minced garlic
- 🍄 1/2 pack enoki mushrooms

Soak dried seaweed in water, rinse, and drain well.

In a pot, add the soaked seaweed, diced tofu, and minced garlic.

Pour in 6 cups of anchovy stock.

Add 3 tbsp of miso paste, dissolving it thoroughly into the soup.

Bring the soup to a boil, then add the trimmed and halved enoki mushrooms. Simmer briefly.
