- 🍄 2 shiitake mushrooms, sliced
- 1/4 bunch garlic chives, chopped
Protein
- 🥚 1 egg, beaten
Liquid
- 💧 400cc water
Seasoning
- 1 tsp Japanese dashi powder
- 1 tsp sake
- 1 tsp soy sauce
- 🧂 1/3 tsp salt
Thickener
- 1 tsp cornstarch
- 💧 2 tsp water

Trim the stems of shiitake mushrooms and slice them thinly. Chop garlic chives into 3cm pieces.
Crack the egg into a container and beat it well.
Bring water to a boil over medium heat and add dashi powder. Add shiitake mushrooms and simmer for 1 minute. Stir in sake, soy sauce, and salt.
Mix cornstarch with water to create a slurry and add it to the soup. Stir well. Slowly pour in the beaten egg while stirring.
Add garlic chives and simmer for 1 minute.
