- 30g (5 slices) prosciutto

Peel and seed the shiro-uri. Slice into 5mm thick pieces. Place the slices in a container, sprinkle with salt, massage gently, and let sit for 10 minutes. Squeeze out excess water.

Cut the prosciutto into bite-sized pieces. In a bowl, combine shiro-uri, prosciutto, vinegar, olive oil, and black pepper. Mix well.
