- 🦐 5 large shell-on shrimp

- 50g ground pork

- 🌿 50g cilantro
- 🧅 1/4 purple onion, sliced
- 🍋 1/6 lemon

- 1/2 tbsp salad oil
Broth
- 300ml kombu dashi
- 1/2 tbsp fish sauce
- 2 pinches sliced red chili
- 🧄 1/2 clove sliced garlic

Prepare the shrimp by making a shallow cut along the back, removing the vein if present, and trimming the legs. Chop cilantro roots and stems finely, and roughly chop the leaves. Slice the purple onion thinly.
Heat salad oil in a pot over medium heat. Add ground pork and chopped cilantro roots and stems, sauté briefly, then add the broth ingredients (kombu dashi, fish sauce, red chili, garlic) and shrimp. Cook until the shrimp are fully cooked.
Top with sliced purple onion and cilantro leaves, then turn off the heat. Serve with a wedge of lemon.
