- 🍤 8 shrimp (120g), peeled and deveined
Eggs
- 🥚 2 eggs
Vegetables
- 🍄 1 pack shimeji mushrooms
Seasoning
- 1/2 tbsp sake
- 1 tbsp cornstarch
- 🧂 Pinch of salt and pepper
- 1 tbsp sesame oil
Egg Mixture
- 1 tbsp mayonnaise
- 🧂 Pinch of salt and pepper
Sauce
- 1 tbsp sake
- 🧂 1/4 tsp salt
- 🧂 Pinch of pepper

Peel and devein the shrimp, rinse with water, and pat dry. Mix with sake, salt, pepper, and cornstarch in a bowl.
Trim the root of the shimeji mushrooms and separate them into bite-sized pieces.
Beat the eggs in a bowl and mix with mayonnaise, salt, and pepper.
Heat 1/2 tbsp sesame oil in a pan over medium heat, pour in the egg mixture, and stir until semi-cooked. Remove from the pan.
Add the remaining sesame oil to the pan, stir-fry the mushrooms over medium heat for 1 minute. Add shrimp and sauce ingredients, cooking until shrimp is fully cooked. Return the eggs to the pan and stir briefly.
