    • 8cm daikon radish (240g)
  • Cooking Oil

    • 1/2 tbsp salad oil
  • Garnish

    • Chopped green onion, as needed

    • 1 tbsp sake
    • 2 tbsp mirin
    • 🍬 1/2 tbsp sugar
    • 2 tbsp vinegar
    • 2 tbsp soy sauce
    • 💧 150ml water

Cut the daikon radish into 2cm thick slices, peel the skin, and quarter each slice into wedges.

Place the chicken thigh skin-side down and cut into 4 equal pieces. Make shallow cuts in thicker parts.

Heat salad oil in a frying pan over medium heat. Place chicken skin-side down and cook until browned. Flip and brown the other side.

Add daikon radish and the seasonings (☆). Mix well, bring to a boil, then cover and simmer on low heat for 20 minutes until the daikon is tender.

Remove the lid and simmer on medium heat for 3 minutes to thicken the sauce. Serve on a plate and garnish with chopped green onion.
