Main
- 🐟 2 fillets of fresh salmon
- 🍆 3 eggplants
- 300g grated daikon
- 🧂 Pinch of salt
- Potato starch as needed
- 3 tbsp salad oil
Broth
- 3 tbsp concentrated soy sauce (3x)
- 💧 150cc water
Garnish
- 1 tsp grated ginger
- 🧅 Chopped green onion as needed
BƯỚC
Cut off the stem of the eggplants, halve them, score the skin, and cut into bite-sized pieces.
Cut the salmon into bite-sized pieces, sprinkle with salt and potato starch.
Grate the daikon and squeeze out excess water.
Heat salad oil in a frying pan, add the eggplants, and cook over medium heat, flipping until browned. Remove from the pan.
Add the salmon to the same pan and cook over medium heat until both sides are golden brown.
Return the eggplants to the pan, add the broth ingredients and half of the grated daikon, and simmer for 3 minutes.
Serve on a plate, top with the remaining grated daikon, grated ginger, and sprinkle with chopped green onions.
