Peel and slice the taro into 2cm thick pieces. Slice the ginger thinly.

In a pot, combine water, mirin, sugar, soy sauce, and dashi powder. Heat over medium heat until boiling, then add squid and ginger. Cook for 1 minute until squid changes color, then remove squid.

Add taro to the pot, cover, and simmer on low heat for 20 minutes until taro is tender.

Return squid to the pot and simmer on low-medium heat for 5 minutes.
