Main Ingredients
- 🥬 400g chopped kimchi
- 🍢 250g firm tofu, cubed
Seasonings
- 1 tbsp chili powder
- 🍬 1 tbsp sugar
- 3 tbsp mirin
- 🧂 1 tbsp soy sauce
- 1 tbsp cooking oil
- 2 tbsp sesame oil
Optional Ingredients
- 🧀 2 slices cheddar cheese
- 🧀 1/2 cup mozzarella cheese

Chop the kimchi into small pieces and measure 400g.
Mix the kimchi with all the seasonings in a bowl and let it sit for 10 minutes.
Cut the tofu into 2cm cubes.
Spread the seasoned kimchi evenly in a pan and cook on high heat until it starts to sizzle.
Cover the pan with a lid and let it cook for 1 minute.
Uncover and stir-fry the kimchi on high heat for 30 seconds.
Reduce the heat to low and add the tofu cubes to one side of the pan.
Optionally, add mozzarella cheese and cheddar cheese on top of the kimchi.
Cover the pan again, increase the heat to high, and let it cook for 2 minutes.
Serve the spoonable tofu kimchi hot. Enjoy with rice or as a side dish.
