    • 🍬 1/2 tsp sugar
    • 🧂 1 tbsp soy sauce

    • 1 tbsp vegetable oil
    • 1 tbsp potato starch (for bitter melon)

Mince the green onion. Cut the bitter melon into 12 slices, remove seeds and pith, and coat with potato starch.

Mash the fish cake in a plastic bag until smooth. Add the remaining meat filling ingredients and knead until sticky. Cut a corner of the bag to pipe the filling into the bitter melon slices.

Heat vegetable oil in a frying pan over medium heat. Place the stuffed bitter melon slices in the pan and cook for 4 minutes until browned. Flip, add 1 tbsp water, cover, and steam for 5 minutes on low-medium heat.

Add the sauce ingredients to the pan and cook for 2-3 minutes, turning the slices to coat evenly until the sauce thickens.
