- 1 bitter melon (250g)
- 1 tbsp potato starch
- 1/2 tbsp salad oil
Meat Filling
- 150g ground pork
- 🧅 1/4 onion (50g), minced
- 🌽 2 tbsp canned corn
- 🧂 1/4 tsp salt
- Pinch of pepper
- 1/2 tbsp potato starch
Miso Sauce
- 1 tbsp sake
- 2 tbsp mirin
- 1 tsp soy sauce
- 1 tbsp miso
- 🧄 1/2 tsp grated garlic
- 1 tsp sesame oil

Cut off both ends of the bitter melon, slice it lengthwise, and remove seeds and pith. Dust the inside with potato starch. Mince the onion and microwave it for 30 seconds at 600W to soften.
Mix the meat filling ingredients in a bowl until sticky and evenly combined. Stuff the mixture into the bitter melon halves.
Heat salad oil in a frying pan over medium-low heat. Place the stuffed bitter melon with the meat side down and cook for 4–5 minutes until browned. Flip, add 2 tbsp water, cover, and steam for 6–7 minutes until cooked through.
Mix the miso sauce ingredients in a separate bowl.
Wipe excess oil from the frying pan with a paper towel. Add the miso sauce and simmer over medium heat for 2 minutes until thickened.
Slice the stuffed bitter melon into bite-sized pieces, plate, and drizzle with the miso sauce.
