Cut the burdock root diagonally into 2–3mm slices without peeling. Soak in water for 5 minutes, then pat dry. Place the burdock and potato starch in a plastic bag, seal, and shake to coat evenly.

Heat salad oil in a frying pan over medium heat. Spread the coated burdock slices in the pan and fry until crispy and golden brown. Remove from the pan.

Wipe the remaining oil from the pan with a paper towel. Add the ☆ seasonings (sake, mirin, sugar, soy sauce) and heat over medium heat until bubbling. Add the fried burdock and coat evenly. Sprinkle with white sesame seeds and mix well.
