Slice the sweet potato thinly using a slicer. Soak the slices in water for 20 minutes, then drain and pat dry with kitchen paper. Let them air dry for 10 minutes.
Heat vegetable oil in a pot to 160°C (320°F), about 3 cm deep. Fry the sweet potato slices until they are crispy on the surface.
While still warm, toss the fried sweet potato chips in a bowl with salt to season.
