Remove the stems from the tomatoes and slice them thinly. Trim the stems from the shiso leaves and slice them thinly.
In a bowl, mix all the dressing ingredients (Parmesan cheese, vinegar, salt, olive oil, and black pepper).
Arrange the tomato slices and prosciutto alternately on a plate. Drizzle the dressing over them, top with shiso leaves, and sprinkle grated Parmesan cheese.
