- 25g of kaiware sprouts

Kimchi Sauce
- 40g of minced kimchi
- 🧅 30g of sliced green onion
- 1/2 tbsp of mentsuyu (3x concentrated)

Trim the roots of the kaiware sprouts and cut them into 1cm pieces. Slice the green onion thinly on a diagonal. Mince the kimchi.

In a bowl, mix the kimchi, green onion, and mentsuyu. Add the chopped tuna and kaiware sprouts, and mix well.

Plate the mixture and top with the egg yolk.
