- 1 can tuna in oil
Condiments
- 2 tbsp mayonnaise
- 1 tbsp mirin
- 🧂 Pinch of salt

- 1 umeboshi (pickled plum)

- 1 tbsp salad oil

Remove the seed from the umeboshi, mash it into a paste, and mix with tuna and mayonnaise in a bowl.
In a separate bowl, beat the eggs and mix with mirin and a pinch of salt.
Heat a tamagoyaki pan with salad oil spread thinly, then pour 1/3 of the egg mixture into the pan over medium-low heat.
Place the ume tuna mayo mixture at the far end of the pan and roll the egg towards you once it sets.
Repeat with the remaining egg mixture, adding 1/3 at a time, and roll each layer towards you.
