Mix all the tomato sauce ingredients in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 3 minutes. Stir, then microwave uncovered for another 2 minutes and stir again.

Place the fried horse mackerel in a heatproof container, pour the tomato sauce over them, and top with pizza cheese. Bake in a toaster oven for 2–3 minutes until golden brown. Sprinkle chopped parsley before serving.
