Udon Noodles
- 2 frozen udon noodles
Beef and Burdock
- 120g thinly sliced beef belly
- 50g burdock root
- 50g green onion
- 1 tsp salad oil
Beef and Burdock Seasoning
- 1 tbsp sake
- 1 tbsp mirin
- 1.5 tbsp soy sauce
- 50ml water
Udon Soup
- 600ml water
- 2 tbsp mirin
- 1.5 tbsp soy sauce
- 🧂 1/4 tsp salt
- 1 tsp Japanese dashi powder
चरण
Thinly slice burdock root using a rotating motion with a knife and soak in water. Slice green onion into small pieces, soak in water for 5 minutes, and squeeze out excess water.
Heat salad oil in a frying pan, add beef and burdock, and stir-fry over medium-low heat until the beef changes color.
Add the beef and burdock seasoning ingredients, mix, cover, and simmer on low heat for 3 minutes. Remove the lid, increase to medium-low heat, and cook for 1 minute to reduce the liquid.
In a pot, bring the udon soup ingredients to a boil, add udon noodles, and cook according to package instructions.
Serve the udon in bowls, top with the beef and burdock mixture, and garnish with green onion.
