In a bowl, mix the egg and milk, then add the pancake mix and stir to create the batter.

Heat a frying pan with salad oil spread thinly using a paper towel over medium heat. Scoop 1/8 of the batter and pour into the pan, making 4 portions. Reduce to low heat, add 1/8 of the shredded cheese on each portion, and place a sausage in the center. Cook until bubbles appear on the surface.

Using a spatula, fold both sides of the batter over the sausage to enclose it. Cover the pan and cook on very low heat for 2–3 minutes until fully cooked. Repeat for all portions to make 8 hot dogs.
