Tear king oyster mushrooms into bite-sized pieces. Trim the root of shimeji mushrooms and separate them. Slice garlic thinly and remove its core using a toothpick.

Cut chicken into bite-sized pieces and place in a bowl. Add marinade ingredients (sake, soy sauce, potato starch) and massage well.

Heat salad oil and garlic in a frying pan over low heat until fragrant. Add chicken and cook on medium heat for 3–4 minutes until browned. Flip chicken, add mushrooms, and stir-fry until chicken is cooked through and mushrooms are tender.
