Line a microwave-safe plate with parchment paper. Divide the shredded pizza cheese into 4 portions and place them spaced apart on the paper. Sprinkle with black pepper.
Microwave at 600W for 1 minute without covering. Place one shiso leaf on each cheese portion, then microwave again at 600W for 30 seconds to 1 minute without covering.
Let the cheese cool on the parchment paper until crispy.
