    • 3 tbsp white miso
    • 1 tbsp mirin
    • 1 tbsp sake

Mix white miso, mirin, and sake in a bowl to create the miso sauce.

Place the red fish fillets in a tray and coat both sides with the miso sauce. Cover with thick kitchen paper and press gently. Wrap tightly with plastic wrap and refrigerate for half a day.

Wipe off the miso sauce from the red fish fillets.

Line a frying pan with foil. Place the fillets with the side that will be on top when served facing down. Cook over low heat for about 3 minutes until browned, then flip. Cover with a lid and steam for about 2 minutes until cooked through.
