Boil water in a pot and cook the fresh Chinese noodles until loosened. Reserve 3 tbsp of noodle water and drain the noodles. Place them in a serving bowl.
Mix the sauce ingredients (soy sauce, chili paste, and noodle water) in a bowl.
Top the noodles with chopped green onion and shredded nori. Create a small indentation in the center and place the egg. Pour the sauce over the dish.
