Slice the fresh onion thinly and soak in water for 5 minutes. Drain well. Cut mizuna greens into bite-sized pieces and mix them in a bowl.
Slice the boiled octopus diagonally into bite-sized pieces.
Mix vinegar, salt, black pepper, and sesame oil in a bowl to prepare the carpaccio sauce.
Arrange the sliced octopus in a radial pattern on a plate. Place the onion and mizuna greens in the center. Drizzle the carpaccio sauce over the dish.
