    • 1/2 tsp consomme

Remove seeds and pulp from the pumpkin and dice into 1.5cm cubes. Slice the eggplant and zucchini into 1cm half-moon pieces. Dice the onion and tomatoes into 2cm cubes. Mince the garlic.

Heat olive oil and garlic in a pot over low heat until fragrant. Add eggplant, zucchini, onion, and pumpkin, then stir-fry over medium heat for 2-3 minutes.

Add tomatoes and seasonings, stir, and cover the pot. Simmer over low heat for 10 minutes until vegetables are tender.
