    • 🐟 2 fillets (160g) mackerel
  • Vegetables

    • 🍄 1/2 pack (50g) shimeji mushrooms
    • 🍄 2–3 shiitake mushrooms
    • 🧅 1/4 onion (50g), sliced

    • 🧈 10g salted butter
  • Seasoning (Miso Sauce)

    • 1 tbsp mirin
    • 1 1/2 tbsp miso
    • 🍬 1/2 tsp sugar
    • 1/2 tsp grated ginger

Mix all the miso sauce ingredients (mirin, miso, sugar, grated ginger) in a microwave-safe bowl. Heat uncovered in a 600W microwave for 30 seconds to 1 minute.

Slice the onion thinly. Trim the root of the shimeji mushrooms and separate them. Remove the stems of the shiitake mushrooms and cut them in halves or quarters.

Pat the mackerel fillets dry with a paper towel.

Place half of the sliced onion on a piece of aluminum foil. Lay one mackerel fillet on top, followed by half of the shimeji and shiitake mushrooms. Drizzle half of the miso sauce over the fish and vegetables. Add half of the butter in small pieces on top. Fold the foil to seal tightly. Repeat for the second fillet.

Place the foil packets on a baking tray and bake in a toaster oven for about 10 minutes or until the mackerel is cooked through. Open the foil slightly and bake for an additional 3–5 minutes to caramelize the miso sauce.
