- 🦐 6 whole prawns
Seasoning
- 2 tbsp sake
- 🧂 1/3 tsp salt
Sauce
- 1 tbsp sake
- 3 tbsp mirin
- 2 tbsp light soy sauce
- 💧 100 ml water
- 1/3 tsp dashi powder
चरण
Rinse the prawns under water to remove sawdust and soak them in ice water for 5 minutes. Cover with a sieve to prevent jumping.
Remove the vein using a toothpick, trim the whiskers, and bend the prawns into a 'C' shape. Secure with a toothpick.
Boil 500 ml water with sake and salt. Add the prawns and boil for 2–3 minutes. Drain and let cool. Remove toothpicks.
Heat the sauce ingredients in a pot over medium heat. Once boiling, add the prawns and cover with a thick kitchen paper as a drop lid. Simmer for 1 minute, then turn off the heat and let cool in the sauce.
