Wash the shiso leaves with water and pat them dry using kitchen paper.
Place mirin in a heatproof container and microwave at 600W for 30 seconds without covering. Let it cool, then mix in soy sauce and sesame oil.
Arrange the shiso leaves in a tray, pour the marinade over them, cover with plastic wrap as a drop lid, and refrigerate for at least 1 hour.
