Base
- 🍚 3-4 bowls of cooked rice
Meat
- 🐖 400g pork belly block
Vegetables
- 🍅 1 can (400g) of whole tomatoes
- 🧅 1 onion (200g), minced
Spices
- 🌿 1 tsp cumin seeds
- 🧂 2/3 tsp salt
- 🧂 Pinch of salt and pepper
- 🌿 1 1/2 tbsp coriander powder
- 🌿 1 tsp turmeric powder
- 1 tsp chili powder
Marinade
- 🌿 1/2 tbsp grated ginger
- 🧄 1/2 tbsp grated garlic
- 🥛 50g unsweetened yogurt
Cooking Oil
- 2 tbsp salad oil
Liquid
- 💧 600cc water
Garnish
- 🌿 20g cilantro, chopped
- 🥜 10g peanuts, chopped
चरण
Cut pork belly into bite-sized pieces and season with salt and pepper. Place pork, marinade ingredients in a bag, mix well, and refrigerate for at least 1 hour.
Mince the onion, chop cilantro into 2cm pieces, and crush peanuts.
Heat salad oil and cumin seeds in a pot over low heat until fragrant. Add minced onion and sauté over medium heat until caramelized. Add canned tomatoes and crush lightly while stirring.
Add marinated pork with its juices, mix, and pour in water. Bring to a boil, cover, and simmer on low heat for 20-30 minutes until pork is tender. Add salt and simmer for another 5 minutes.
Serve curry over rice and garnish with cilantro and peanuts.
