Mix the marinade ingredients (sake, soy sauce, ginger) in a bowl. Add the yellowtail and let it marinate for 10 minutes.

Combine the coating ingredients (flour, potato starch, curry powder) in a plastic bag. Add the marinated yellowtail and shake to coat evenly.

Heat about 2 cm of salad oil in a pot to 160°C. Quickly fry the shishito peppers until lightly cooked.
