- 🥒 1 cucumber
- 60g chives
- 🧅 1/2 onion
Seasoning
- 🧂 0.5 tbsp salt for washing
- 🧂 0.5 tbsp salt for brining
- 1/2 tbsp soy sauce
- 🧄 1/2 tbsp minced garlic
- 1/2 tbsp chili powder
- 1/2 tbsp allulose
- 1 tbsp vinegar
- 1/2 tbsp anchovy sauce
- 1/2 tbsp sesame oil
- 1 tbsp sesame seeds
手順
Rub the cucumber with 0.5 tbsp salt to clean it thoroughly.
Cut off the ends of the cucumber, slice it in half lengthwise, and cut into diagonal slices.
Place the cucumber slices in a bowl, add 0.5 tbsp salt, and mix gently. Let it sit for 5 minutes to brine.
Wash the chives and cut them into lengths similar to the cucumber slices.
Thinly slice 1/2 onion.
In a bowl, mix soy sauce, minced garlic, chili powder, allulose, vinegar, anchovy sauce, sesame oil, and sesame seeds to create the dressing.
Squeeze the brined cucumber slices to remove excess water, then pat dry with a kitchen towel.
Combine the cucumber, chives, and dressing in a bowl.
Adjust seasoning with salt if needed.
Transfer to a plate and sprinkle sesame seeds on top for garnish.
