- 🍄 3 king oyster mushrooms
Seasoning Sauce
- 🧂 7 tbsp soy sauce
- 🍬 1 tbsp sugar
- 1 tbsp plum extract
- 1 tbsp oligosaccharide
- 🍶 1 tbsp cooking wine
- a pinch of black pepper
- kelp-infused water

Lightly wash the king oyster mushrooms with water. Slice them into thirds and cut into flat pieces. Ensure they are not too thin for braising.
Briefly blanch the chicken breast to remove impurities. Do not cut it; it will be braised whole.
Prepare the braising sauce by mixing the soy sauce, sugar, plum extract, oligosaccharide, cooking wine, and black pepper. Add kelp-infused water in equal parts or slightly more than the sauce mixture.
Place the prepared ingredients into a pot and pour the braising sauce over them.
Cook on high heat until it starts boiling, then reduce to medium heat. Skim off any foam that forms on the surface.
Simmer until the sauce reduces to a thick consistency and becomes slightly sticky.
