Main Ingredients
- 1kg pork ribs
- 1/2 head napa cabbage kimchi
- 💧 1000ml water
Seasonings
- 🧄 2 tbsp minced garlic
- 3 tbsp red pepper powder
- 1 tbsp perilla oil
- 🧂 A pinch of black pepper
- 3 tbsp soy sauce
- 🍬 1/3 tbsp sugar
- 100ml kimchi juice

Soak the pork ribs in cold water for 30 minutes to remove blood. Boil enough water to cover the ribs, add the ribs, and boil for 1 minute. Rinse the ribs in cold water. Optionally, add a bit of soju to the boiling water to remove odors.
Place the blanched ribs in a pot. Add minced garlic, red pepper powder, soy sauce, sugar, perilla oil, black pepper, and kimchi juice. Mix well. Place the napa cabbage kimchi on top of the ribs.
Add 1000ml of water to the pot. Cover with a lid and bring to a boil over high heat. Once boiling, reduce to medium-low heat and simmer for 35–40 minutes.
Add the chopped green onion and simmer briefly before serving. Adjust seasoning with sugar if the kimchi is too sour, and add more water if the broth is too reduced.
