Essential Ingredients
- 1 pack enoki mushroom
- 🍚 2 servings cooked rice
- 🧅 1 onion, sliced
- 🧅 1/6 stalk green onion, chopped
- 🥚 2 eggs
- 🧂 A pinch of black pepper
- 1/2 tbsp sesame oil
- A pinch of sesame seeds
Seasoning Ingredients
- 2 tbsp soy sauce
- 2 tbsp mirin
- 💧 2 tbsp water
手順
Trim the base of the enoki mushrooms and cut them into thirds. Slice the onion and chop the green onion.
Heat a pan with a little oil and fry the eggs to your desired doneness.
In the same pan, add a little oil and stir-fry the sliced onion and enoki mushrooms.
Once the enoki mushrooms soften, add the seasoning ingredients (soy sauce, mirin, and water) and simmer until slightly reduced.
Serve the stir-fried enoki mushrooms over cooked rice. Top with the fried eggs, chopped green onion, black pepper, sesame oil, and sesame seeds.
