- 🍅 2 ripe tomatoes
- 🥒 1/2 zucchini
- 🧅 1/2 onion
- 🍆 1 eggplant
- 🍄 6-8 button mushrooms
- 🧄 3-4 garlic cloves
Sauce
- 3 tbsp olive oil
- 1/2 bottle tomato sauce
- 🧂 Pinch of salt
- Pinch of black pepper
手順
Wash and finely chop the onion and garlic. Slice the tomatoes, zucchini, and eggplant thickly, and cut the mushrooms into bite-sized pieces.
Heat a pot over medium heat, add olive oil, and sauté the chopped onion and garlic for about 3 minutes.
Add the mushrooms and tomato sauce, season with salt and pepper, and cook for 1 minute.
Arrange the tomatoes, zucchini, and eggplant neatly in the pot and simmer over medium heat for 15-20 minutes until tender.
Once the vegetables are cooked, garnish with basil or parsley and serve.
