- 🐖 500g pork belly
- 30g grated ginger
Seasoning
- 🧂 1 tbsp soy sauce
- 🍬 1/2 tbsp sugar
- 1 tsp mirin
- 1 tsp sake
手順
Grate the ginger and set it aside for later use.
Season the pork belly with salt and let it sit at room temperature for 3 hours before cooking.
Dust one side of the pork belly with flour using a sieve for even coating.
Pan-fry the pork belly on medium heat without oil until the inside is heated, then increase to high heat.
Flip the pork belly, add grated ginger, and sauté briefly in the pork fat. Add sake and mirin, then cook on high heat to evaporate the alcohol.
Add sugar and stir until the moisture reduces. Finish with soy sauce and mix well.
