Main Ingredients
- 150g frozen tuna
- 🧂 30g salt for thawing
- 1 tsp pepper
- 2 tbsp sesame oil
- 100g brown rice
- 20g butterhead lettuce
- 10g red cabbage
- 2 tbsp boiled chickpeas
- 🥚 1 boiled egg
- 2 tbsp corn kernels
- 1 tsp wasabi
- 2 tbsp bonito flakes
- 35g flying fish roe
Seasoning
- 1 tbsp vinegar
- 1 tbsp allulose
- 🧂 1 tsp salt
手順
Prepare a saltwater solution with 25g salt and 500ml water.
Thaw the frozen tuna in the saltwater solution in the refrigerator for 20 minutes.
Pat dry the thawed tuna and wrap it in a kitchen towel. Refrigerate for 30 minutes to further cure.
Cut the cured tuna into small cubes for easier consumption.
Season the tuna cubes with 1 tbsp sesame oil, a pinch of salt, and pepper.
Prepare the brown rice by mixing with a seasoning of vinegar, allulose, and salt.
Arrange butterhead lettuce, red cabbage, chickpeas, corn, brown rice, and boiled egg as toppings.
Add wasabi and flying fish roe on top of the toppings.
Place the seasoned tuna cubes on top of the dish.
Sprinkle bonito flakes and drizzle sesame oil lightly to finish.
