INGREDIENTES
Seafood
- 🐚 200g clams (purged)
Broth
- 3g dried kombu (3cm piece)
- 💧 400ml water
Seasoning
- 1 tbsp sake
- 1 tsp soy sauce
- 🧂 Pinch of salt
Vegetable
- 2 snow peas (7g), halved diagonally
PASSOS
Remove the strings from the snow peas and cut them diagonally into halves. Cut the kombu into three equal pieces using scissors.
Wash the clams by rubbing their shells together under running water.
Place the kombu and water in a pot and let it sit for 15 minutes. Add the clams and heat over medium heat. Remove the kombu just before boiling and reduce to low heat. Skim off any foam.
Once the clams open, add sake, soy sauce, and salt to taste. Add the snow peas and cook briefly.
