INGREDIENTES
Filling
- 100g sliced pork
- 🦐 80g peeled shrimp
- 80g bean sprouts
- 🧂 Pinch of salt and pepper
- 1 tbsp vegetable oil
Batter
- 40g rice flour
- 1 tbsp potato starch
- 🧂 Pinch of salt
- 1/3 tsp turmeric
- 80ml water
- 50ml coconut milk
- 🧅 3g chopped green onion
Sauce
- 1 tbsp fish sauce
- 1/2 tbsp vinegar
- 🧂 1 tbsp sugar
- 🧄 1/4 tsp minced garlic
- Pinch of sliced chili
- 3 tbsp water
Vegetables
- 50g lettuce leaves
- 20g cilantro
- 5g mint leaves
Finishing
- 1/2 tbsp vegetable oil
PASSOS
Mix all batter ingredients in a bowl until smooth.
Combine all sauce ingredients in a separate bowl and stir until sugar dissolves.
Prepare vegetables by tearing lettuce, chopping cilantro, and mint into bite-sized pieces.
Heat half of the vegetable oil in a pan over medium heat. Cook pork and shrimp until fully cooked, season with salt and pepper, then set aside.
Clean the pan and heat the remaining oil. Pour batter into the pan and spread evenly. Once edges dry, reduce heat and add cooked filling and bean sprouts to one side. Cover and steam for 30 seconds to 1 minute.
Drizzle finishing oil around the edges and cook on medium-high heat until crispy. Fold the pancake and transfer to a plate.
Serve with fresh vegetables and dipping sauce on the side.
