INGREDIENTES
Staple
- 🍚 2 bowls (400g) white rice
Meat
- 🥩 250g thinly sliced beef belly
Vegetables
- 🧅 1/2 onion, thinly sliced
- 🍄 1/2 pack shimeji mushrooms
- 🧄 1 clove minced garlic
Cooking Oil
- 2 tbsp salad oil
Liquids
- 🍷 100cc red wine
- 💧 400cc water
Spices
- 1 bay leaf
- 1/2 box curry roux (serves 2-3)
- Chopped parsley, as needed
Seasoning
- 🧂 Salt and pepper, to taste
- 1 tbsp all-purpose flour
PASSOS
Trim the root of the shimeji mushrooms and separate them into bite-sized pieces. Thinly slice the onion and mince the garlic.
Season the beef slices with salt and pepper, then coat them evenly with flour.
Heat 1 tbsp of salad oil in a pot over low heat. Add garlic and onion, stirring until caramelized. Remove and set aside. Clean the pot.
Add the remaining 1 tbsp of salad oil to the pot and heat over medium. Stir-fry the beef until browned, then add shimeji mushrooms and cook until softened.
Pour in red wine and stir. Add water and bring to a boil. Skim off any foam, then add bay leaf and caramelized onions. Cover and simmer on low heat for 10 minutes.
Uncover and reduce the liquid by two-thirds. Turn off the heat, add curry roux, and stir until dissolved. Simmer on low heat for 10 minutes, stirring occasionally.
Serve the curry over bowls of white rice and garnish with chopped parsley.
