INGREDIENTES

- 🍗 200g chicken breast
Vegetables
- 🧅 1/2 onion, sliced
- 🍆 1 eggplant, chopped
- 1 yellow bell pepper, chopped
- 🍄 1 pack shimeji mushrooms
- 🧄 1 clove garlic, minced

- 🧀 30g pizza cheese
- 🧀 Grated parmesan cheese, as needed

- 🌿 Parsley, for garnish

- 🥖 Baguette, as needed
- 2 tbsp olive oil
Canned Goods
- 🍅 1 can whole tomatoes
Seasonings
- 🍬 1 tsp sugar
- 🧂 1/3 tsp salt
- Pepper, to taste
- 1/2 tbsp consomme
PASSOS
Slice the onion, chop the eggplant and yellow bell pepper, and separate the shimeji mushrooms. Mince the garlic.
Cut the chicken breast into bite-sized pieces.
Heat olive oil and garlic in a pan until fragrant. Add chicken and cook over medium heat until the color changes.
Add onion, eggplant, yellow bell pepper, and shimeji mushrooms to the pan. Stir briefly, then add canned tomatoes, sugar, salt, pepper, and consomme. Mix well and bring to a boil. Cover and simmer on low heat for 10 minutes.
Transfer the mixture to a heatproof dish. Sprinkle pizza cheese and grated parmesan cheese on top. Bake in a toaster oven for 5-6 minutes until the cheese is melted and golden.
Garnish with parsley and serve with baguette slices.
