INGREDIENTES
Main
- 🍗 200g chicken thigh
- 🍋 1 lemon
- 🥬 1/8 napa cabbage
- 1/4 bunch mizuna
- 🍄 1/2 pack enoki mushrooms
- 30g glass noodles
- 🧂 1/2 tsp salt
Soup Base
- 4 tbsp shio koji
- 🍋 Juice of 1/2 lemon
- Pinch of black pepper
- 💧 800ml water
PASSOS
Slice half of the lemon thinly and squeeze the juice from the remaining half.
Cut mizuna and napa cabbage into bite-sized pieces.
Trim the root of enoki mushrooms and cut them in half. Cut chicken thigh into bite-sized pieces. Halve the glass noodles with scissors.
Bring the soup base ingredients to a boil in a pot.
Add chicken pieces and skim off any foam. Cover and simmer on low heat for 5 minutes.
Add salt, vegetables, and glass noodles. Cook until everything is tender.
Top with lemon slices and serve hot.
