    • 1 tbsp sake
    • 1 tbsp mirin
    • 🍬 1/2 tbsp sugar
    • 1 1/2 tbsp soy sauce
    • 💧 200cc water

Cut daikon into 1.5cm slices, peel thickly, and quarter. Cut carrot into bite-sized pieces. Remove snow pea strings, microwave with 1 tbsp water for 20–30 seconds, cool, and halve diagonally. Slice ginger thinly.

Trim excess fat and sinew from chicken thighs and cut into bite-sized pieces.

Heat salad oil in a pan over medium heat, place chicken skin-side down, and cook for 2 minutes until browned. Flip and cook for another 2 minutes until color changes.

Add daikon and carrot to the pan, stir to coat with oil. Add ginger and all seasonings except soy sauce. Cover and simmer on low heat for 10 minutes.

Add soy sauce, mix, and simmer covered for another 5 minutes. Remove lid and cook over medium-high heat for 3 minutes until glossy.

Plate the dish and garnish with snow peas.
